Five steps to full success with your valencian paella

To cook SECRET DE LEVANTE it is necessary to know the characteristics of our heat source and the paella (container).

Place the paella

Rice

As soon as the broth begins to boil, add the rice and keep the fire at a maximum power for 7 minutes. It is very important to distribute it evenly throughout the paella. Rectify the salt to taste, as many times as necessary until achieve the desired flavor.

Reduce power

After 7 minutes at maximum power, reduce the power of the fire to a minimum for 10 minutes without stopping the boiling.

Turn off

Finally, after 10 minutes of fire to the minimum we give a blow to maximum power for 10 seconds to get the “Socarrat“, that crunchy paste at the bottom of the paella so appreciated by the Valencians.

Gas

To make it with gas, we recommend the use of pans (container) Garcima.
A paellero with two or more rings is recommended for paellas larger than 36 cm.


Induction and Vitroceramic

In the induction and glass ceramic, flat bottom paellas with a diameter that does not
exceed the plate’s fire should be used.

Measures of the paella

According to the number of diners, the measurements of the paella should be as
follows:
– For two guests 36 cm
– For three guests 40 cm
– For four guests 46 cm
