Five steps to full success with your valencian paella
To cook SECRET DE LEVANTE it is necessary to know the characteristics of our heat source and the paella (container).

Light the fire at full power and wait until it starts to boil.
As soon as the broth begins to boil, add the rice and keep the fire at a maximum power for 7 minutes. It is very important to distribute it evenly throughout the paella. Rectify the salt to taste, as many times as necessary until achieve the desired flavor.
After 7 minutes at maximum power, reduce the power of the fire to a minimum for 10 minutes without stopping the boiling.
Finally, after 10 minutes of fire to the minimum we give a blow to maximum power for 10 seconds to get the “Socarrat“, that crunchy paste at the bottom of the paella so appreciated by the Valencians.

– For three guests 40 cm
– For four guests 46 cm
